The Malus domestica 'Gueule de Mouton', often simply called "Gueule de Mouton", is a variety of apple tree particularly appreciated for its hardy character and its production of original fruits. The Gueule de Mouton is a vigorous tree, with rapid growth. Being grafted on a low stem, it generally reaches a height of 3 to 4 meters at maturity, with a comparable spread.

The Gueule de Mouton is a self-sterile variety, meaning that it needs other varieties of apple trees to produce fruit. Among the most commonly cited, we find the 'Transparente de Lesdain', the 'Alkmene', the 'Président Roulin', the 'Reine des Reinettes' and the 'Radoux', Reinette Evagil... It is itself an excellent pollinator for other varieties.
The fruits of the Gueule de Mouton are medium-sized (65 mm), elongated and slightly asymmetrical, hence its name evoking the shape of a sheep's mouth. Their skin is semi-rough, greenish-yellow in colour, sometimes streaked with pink. The flesh, yellowish-white, is firm and juicy, with a characteristic taste, both sweet and tangy.
The harvest period generally extends from October to January, or even later, depending on weather conditions. The fruits keep well for several months in a cold room.
The apples of the Gueule de Mouton are versatile. They can be eaten fresh, but are also excellent for making juice, cider, compotes and pies.
